I concur that Santarpio's pizza is highly overrated. I don't know what all the hype is about. That crust! So dry it could choke a horse.

Cupcake fad economics applied to takeout. What could possibly go wrong?

It's real ramen, not cupanoodles.

Did you see the image in the article? Real ramen is much more than noodles

Notice the word "noodle".

So he zips it up with some different meat (i.e. lobsta) options and/or tops it all with a duck egg (if you prefer) and serves it with a ear of corn, pickles and another egg.

The soup, in its basic form, consists of noodle.

So, if you wish to pay $30 (assuming the lobsta is the most expensive), go for it, by all means!

I rather spend the $25-30 bucks on a nice petit filet mignon.

But to each his own.

Aside from that, I do wish the chef well. There are enough foo-foo folks who live in the South End/Back Bay/Beacon Hill areas that get real excited when they hear "local" and "from scratch", that he will probably do quite well for himself.

When you cook authentic ramen, you need to serve it right away otherwise the noodles get all swollen. I wonder how they deliver noodles that aren't swollen and soggy.

When I get ramen from the Sapporo in H-Mart, they package the noodles separately from the soup and its other contents. You combine it yourself when you're ready to eat it.

A lot of places (pho places in my experience) will have the noodles in a separate container. I would presume that is the case with these (which seems like common sense), but I cannot confirm since I've never ordered from him.
