What's the Globe have against Charles Sarkis?

Riggs chronicles the sometimes subtle, sometimes blatant ways the Globe constantly casts aspersions on Sarkis, he of the Back Bay Restaurant Group and Wonderland racetrack:
... Too bad Mr. Sarkis doesn't have a media empire. I bet he'd give the hacks at the Boston Globe a run for their money.

maybe they've seen his kitchens
I worked for two of his places, some of the dirtiest kitchens I've ever seen. I worked at Legal Seafoods and his Atlantic Fish Co. , they were night and day in terms of standards. I don't think I even need to offer an opinion about Wonderland, those poor abused dogs.
Dog abuse?
Do you have proof of this? I'd like to point out that Mr. Sarkis' track is also active in greyhound adoption, holding an annual event at Wonderland to promote the practice.

Atlantic Fish? A dirty kitchen? You have no idea what you're talking about. 30 years in this industry and recently employed by the Back Bay Restaurant Group, I've seen no organization with higher standards for quality, cleanliness, and service.
