Spanish-influenced speakeasy-style gastropub could replace Japanese place on Newbury Street

Itadaki, 269 Newbury St. in the Back Bay, could soon be replaced by Pinky's, whose lawyer told the Boston Licensing Board yesterday will specialize in "small plates and street" food "inspired by northern Spain," with some larger dishes, such as paella.

However, owner Richard Sullivan, best known for his role at R.F. O'Sullivan & Son in Somerville, asked the board to defer any vote on his proposed purchase of the Itadaki liquor license until after he meets with the Neighborhood Association of the Back Bay.

His attorney, Tom Miller, said Pinky's will be "reminiscent of a speakeasy," where people in the neighborhood can go for "intimate dining, conversation and socialization among friends."

In addition to the small plates, Pinky's will also serve craft cocktails and a selection of "curated" wines, Miller said.

Pinky's has a proposed closing time of 1 a.m.
