Red Lantern on Stanhope Street and Kennedy's Midtown on Province Street - which are owned by the same group - go before the Licensing Board on Wednesday for permission to serve entire bottles of booze to patrons at their tables.
The hearings could prove interesting - the licensing board has long taken a dim view of letting people have unfettered access to high-proof liquor.

Bottle service in Boston?
Just speculating, but the Boston Licensing Board hates this kind of thing and will quickly nix this proposal. They banned the use of tabletop beer towers not long ago. They're probably privately against the notion of pitchers of beer.

Boston once again proves why the nightlife is so terrible in this city. I had high hopes for happy hour to come back with the casino bill, but as always, the going out at night crowd is shunned
Unfortunate Sign of the Times
So much pressure has been put back on bars/alcohol-serving restaurants to account for the actions of boozing patrons well after they leave said establishments. The state licensing board doesn't even want to give establishments the opportunity to accept that level of pressure.

Other than the widespread attributions to be found online (NONE of which provide an source or context), is there any documentation that Doroty Parker coined that? I don't think it came from her.

They have to assign a special server to the table to pour the drinks, rather than letting the patrons pour their own. Lots of places in Boston do it that way.

"bottle service" - is yet more evidence of the ongoing New Yorkification of Boston. I make no statement on whether that is a good or bad thing.
Conspicuous consumption
Bottle service is for those who revel in conspicuous consumption for the sake of it. You pay many hundreds of dollars for a bottle of booze that can be bought in a liquor store for $30-$40. Apparently this makes some people feel quite important. I'm sure those Egyptian heir students causing such an uproar at the Ritz-Carlton will love it.
