They say home fries make the cafe

Mags is beginning to plan her very own cafe and she reports she's concentrating on the breakfast menu right now:

... I was told that home fries (or hash browns) makes or breaks a cafe that serves breakfast. I don't disagree. There are literally hundreds of way you can make home fries-which got me thinking about how YOU would want them if you came to my cafe. So, why don't you tell me? ...

I have never understood the East Coast thing with breakfast home fries. Give me hash browns -- crispy on the outside, tender on the inside, not too dry, not too greasy, with enough salt & pepper to taste -- any time.

Though I can happily leave aside the hash browns I've had every time I've visited IHOP. Disgustingly greasy, overly drenched in the butter/margarine/whatever they make them with.

Horrible home fries are far too common around here. I agree w/the poster above- hash browns done well are the way to go.

Sadly the state of spuds in these parts is huting. For the most part home fries are uninspiring. Hash browns are hard to find. The best hash browns I've had were doing my Marine Corps days many moons ago. This would include a breakfast staple-Creamed Chipped Beef, commonly refered to as 'sht on a shingle'! How come I don't see this stuff around?

Oh my God. My mother used to serve that to us over boiled potatoes when we were kids. It was awful. If I saw it on the menu, I think I would run. As for the hash browns vs home fries. I love home fries with onions and peppers. The only problem is they are really only good when you eat them right away. The longer they sit, the mushier they get and that's usually what you get around here.

I'm guessing that your cream chipped beef wasn't spiced much. It definitely needs to carry some pepper. Also, putting it on potatoes was a mistake. Something crisper like toast (the shingle of the aforementioned Marine treatment) is needed. It's such a good pick-me-up on a cold weekend morning. The other awesome morning dish would be biscuits and sausage gravy (Southern style). Again, needs plenty of pepper and a slightly spicier sausage mix. The gravy should stand up almost on its own even before putting it on the biscuits. Mmmm. As for hash browns, I can take them or leave them, I'm not a huge fan. I'd go with smaller crispier potatoes than big mushy wedges though. But to each their own.

Creamed Chipped Beef, commonly refered to as 'sht on a shingle'! How come I don't see this stuff around?

My late father was a fan, but I think the name says it all.

Hash browns, for sure. Easier and better, though they don't help amortize the fryolator. A little onion would be nice.

The Druid does really nice crispy spuds with their breakfast, maybe some of the best breakfast purdies I've had recently.
